Egg and Cheese Burritos w/Fresh Pico

Ingredients:
  • (1 large) tomato, chopped
  • (1/2 cup) green onions, chopped
  • (1/2 cup) fresh cilantro, chopped
  • (2 tsp.) fresh lemon juice
  • (1/8 tsp.) salt
  • (1/8 tsp.) black pepper
  • Crushed red pepper flakes
  • (1/4 tsp.) fresh oregano, chopped
  • (1/8 tsp.) salt
  • (1/8 tsp.) black pepper
  • (4 large) eggs, lightly beaten
  • Dash of ground red pepper
  • (1/4 cup) onion, chopped
  • (1 2-oz. can) diced green chiles
  • (4 6-in.) corn tortillas
  • (1/2 cup) colby-Jack cheese, shredded

Egg and Cheese Burritos w/Fresh Pico

Warm corn tortillas filled with spicy green chiles, eggs and cheese.

    Instructions

  1. 1Spray a large nonstick skillet with cooking spray and place over medium heat.
  2. 2In a small bowl, whisk together oregano, salt, pepper, eggs and ground red pepper. Pour into pan, add 1/4 cup onion and green chiles. Cook 3 minutes, stirring frequently. Remove from heat, stir to combine.

  3. 3Meanwhile, combine tomato, onions, cilantro, lemon juice, salt, pepper and red pepper flakes in a small bowl, set aside.
  4. 4Warm tortillas in microwave according to package. Assemble burritos by topping with eggs, 2 Tbsp. cheese and 1/3 cup pico. Enjoy!
