Lemon Oatmeal w/Apples and Yogurt

  • (1 cup) regular rolled oats
  • (3 Tbsp.) fresh lemon juice
  • (2) firm tart apples, peeled
  • (1/4 cup) toasted or raw sliced almonds
  • (3 Tbsp.) agave syrup, maple syrup or mild honey
  • (1/4 cup) unsweetened shredded coconut, toasted or dried currants
  • (1 cup) plain low-fat yogurt (optional)

  1. 1Stir together oats and 3/4 cup water in a medium bowl, set aside.
  2. 2Slice 1 apple into 8 slices. In a large bowl, toss apple slices with lemon juice, set aside. Shred the other apple into remaining lemon juice, toss.
  3. 3Add oats, nuts, syrup and coconut, stir to combine. Portion out, top with yogurt and apple slices.
