  • (2) eggs
  • (4) egg whites
  • (1/4 tsp.) salt
  • (1/8 tsp.) black pepper
  • (2 oz.) shredded 50% reduced-fat sharp Cheddar cheese
  • 1/2) Hass avocado, sliced
  • (1/4 cup) prepared chipotle salsa
  • (4) corn tortillas, warmed

Mexican Avocado Omelette

A fluffy omelette filled with sharp Cheddar cheese, creamy avocado and chipotle salsa.

  1. 1Place a medium, nonstick skillet over medium-high heat. Add oil.
  2. 2In a medium bowl, whisk together eggs, egg whites, salt, and pepper. Add to skillet, cook 3 minutes, swirling around the pan as necessary.
  3. 3Top half of the omelette with cheese, cover and cook 2 minutes. Top the other half with avocado and salsa, carefully fold in half.
  4. 4Split omelette in half evenly, serve each half with 2 tortillas.
