  • (3 cups) frozen O'Brien potatoes, thawed
  • (1 large) apple, peeled and chopped
  • (1/4 cup) onion, chopped
  • (1/2-1 tsp.) rubbed sage
  • (2 Tbsp.) water
  • (1 cup) fully cooked lean ham, diced
  • (1/2 cup) shredded reduced-fat cheddar cheese, divided
  • (4) eggs
  • (1 1/2 cups) fat-free milk
  • (1/4 tsp.) salt

O'Brien Ham and Cheese Frittata

  1. 1Preheat oven to 350°F. Place potatoes between several sheets of paper towel, press to drain, set aside.
  2. 2Place a nonstick, oven-safe skillet over medium heat. Add apple, onion, sage and water, cook until tender. Add potatoes and ham, cook until heated. Add half the cheese and take off the heat.

  3. 3Whisk together eggs, milk and salt in a large bowl. Pour into skillet, top with rest of cheese. Bake 35-40 minutes, or until a knife comes out clean. Serve and enjoy.
