Quick Tofu Scramble

  • (1 large) egg
  • (1/2 tsp.) dried tarragon
  • Dash of hot sauce
  • Pinch of salt
  • Freshly ground pepper, to taste
  • (1 tsp.) extra-virgin olive oil, or canola oil
  • (2 Tbsp.) tofu, crumbled (silken or regular)

Quick Tofu Scramble

An egg seasoned with tarragon then scrambled with crumbled tofu and a dash of hot sauce.

  1. 1Place a small nonstick skillet over medium-low heat. Add oil.
  2. 2In a small bowl, whisk together egg, tarragon, hot sauce, salt and pepper; set aside.
  3. 3Add tofu to pan, stir for about 30 seconds. Add egg mixture, cook another 30-60 seconds, stirring. Serve and enjoy.
