Glazed Cinnamon Coffee Cake

  • (1 1/2 cups) granulated sugar, divided
  • (1/2 cup) Grape-Nuts cereal
  • (2 tsp.) instant espresso granules
  • (1 tsp.) ground cinnamon
  • (1 3/4 cups) all-purpose flour
  • (1 tsp.) baking soda
  • (1/2 tsp.) baking powder
  • (1/2 tsp.) salt
  • (1 cup) vanilla fat-free yogurt
  • (1/2 cup) butter, softened
  • (1/2 cup) egg substitute
  • (1 1/2 cups) powdered sugar, sifted
  • (2 Tbsp.) brewed coffee, cooled

Glazed Cinnamon Coffee Cake

A surprising batter made with cereal, instant espresso and vanilla yogurt, drizzled with a coffee-sugar glaze.

  1. 1Preheat oven to 350°F. Spray an 8x8 in. baking dish with cooking spray.
  2. 2In a small bowl, whisk together 1/2 cup sugar, cereal, dry espresso and cinnamon; set aside.
  3. 3In a large bowl, combine flour, 1 cup sugar, baking soda, baking powder and salt. Use an electric mixer on low to beat in yogurt, butter and egg substitute.

  4. 4Add half of mixture to greased pan, top with cereal and remaining batter. Bake 45 minutes, or until a toothpick comes out clean.
  5. 5Meanwhile, whisk together powdered sugar and coffee in a small bowl. Pour over cake and serve.
