Instructions
1Steep tea bags for 5 minutes in a teapot or kettle, covered. Remove tea bags and throw them away.
2Place a large saucepan over high heat. Add tea and prunes, bring to a boil. When boiling, cover and reduce heat to medium-high. Simmer 5 minutes, transfer to blender. Puree until smooth.
3Transfer mixture back to pan and place pan back over high heat. Add sugar and lemon rind, stir to combine.
4Bring to a boil then reduce heat back to medium and simmer 20 minutes, uncovered, stirring frequently. Add vanilla, stir.
5Remove from heat and transfer to plastic container. Cool in refrigerator at least 1 hour, up to 2 months. Serve with whole-wheat toast, muffins, fruit, etc.
