Cheesy Sausage Casserole

  • (2 links) chicken apple sausage, diced
  • (3 cups) mushroom slices
  • (2 tsp.) canola oil
  • (7 slices) 100% whole wheat bread, cubed
  • (2 cups) reduced fat sharp cheddar cheese, shredded
  • (1/4 cup) green onions, chopped
  • (3 large) eggs
  • (1 tsp.) ground dry mustard
  • (3/4 cup) egg substitute
  • (2 cups) fat free half-and-half
  • (1/2 tsp.) salt
  • Ground black pepper

Cheesy Sausage Casserole

Whole wheat bread is cubed, soaked in a mixture of sausage, vegetables, cheese and eggs, then baked until crispy.

  1. 1Spray a 13x9 in. baking pan with canola oil cooking spray.
  2. 2Place a large, non-stick skillet over medium-high heat. Add oil. When hot, add sausage and mushrooms. Cook about 5 minutes or until browned throughout, stirring frequently.

  3. 3Add bread and half of cheese, toss and transfer to greased baking dish. Sprinkle with other half of cheese.
  4. 4Use an electric mixer on medium to beat together eggs and ground mustard. Add egg substitute, half and half, salt and pepper, beat until combined.

  5. 5Pour over bread, cover and refrigerate at least 8 hours, up to overnight.
  6. 6Preheat oven to 350°F. Let casserole rest at room temperature for 20 minutes, then bake 45 minutes, or until a knife comes out clean. Cool 10 minutes and serve.
