Ingredients:
  • (1/4 cup) whole wheat flour
  • (1/4 cup) all-purpose flour
  • (1/4 cup) rolled oats
  • (1/4 cup) cornmeal
  • (2 tsp.) Splenda®
  • (1/2 tsp.) salt
  • (1 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) ground cinnamon
  • (2) egg whites
  • (2 Tbsp.) plain nonfat yogurt
  • (2 Tbsp.) skim milk
  • (2 Tbsp.) water

Whole Grain Pancakes

Whole grain pancakes made with rolled oats, cornmeal and nonfat yogurt.

    Instructions

  1. 1Combine flours, oats, cornmeal, sweetener, salt, baking powder, baking soda and cinnamon in a medium bowl.
  2. 2In another small bowl, whisk together eggs, yogurt, milk and water. Pour into the dry ingredients, stir to combine.
  3. 3Spray a large skillet with cooking spray and place over medium heat. Measure out 1/3 cup per pancake, pour onto skillet.
  4. 4Cook 2-3 minutes, or until bubbling. Flip and cook another 1-2 minutes, or until golden brown.
