Spanakopita Omelette

  • (1/4 cup) cooked spinach, drained
  • (4 large) eggs
  • (1/2 cup) crumbled feta cheese
  • (2) scallions, thinly sliced
  • (2 Tbsp.) fresh dill, chopped
  • Freshly ground pepper, to taste
  • (2 tsp.) extra-virgin olive oil

Spanakopita Omelette

A spinach-pie inspired omelette filled with chopped spinach, feta cheese, scallions and dill.

  1. 1In a medium bowl, whisk eggs with feta, scallions, dill, pepper and spinach.
  2. 2With oven rack in top position, preheat the broiler.
  3. 3Place a large nonstick skillet over medium heat. Add oil. Add egg mixture and swirl around the pan to spread the mixture. Cook on medium-low 3-4 minutes.

  4. 4Broil in pan about 2 minutes, or until set. Cut in half and serve.
