Black Bean and Cheese Omelette

  • (2 Tbsp.) fresh cilantro, chopped
  • (1/4 tsp.) salt
  • (4 large) egg whites
  • (1 large) whole egg
  • (1/2 cup) canned black beans, rinsed and drained
  • (1/4 cup) green onions, chopped
  • (1/4 cup) reduced-fat shredded cheddar cheese
  • (1/4 cup) bottled salsa

Black Bean and Cheese Omelette

A fluffy egg white omelette filled with creamy black beans, cheddar cheese and salsa.

  1. 1Place a medium nonstick skillet over medium heat. Spray with cooking spray.
  2. 2In a medium bowl, whisk together cilantro, salt, egg whites and whole egg, pour into pan. As it sets, tilt pan around to spread mixture. Cook 3 minutes.

  3. 3In a separate medium bowl, combine beans, onions, cheese and salsa. Flip omelette, add beans to one side. Carefully fold omelette in half over beans.

  4. 4Cook another minute or until cheese is melted. Cut in half and serve.
