Goat Cheese Muffins

Ingredients:
  • (3/4 cup) crumbled soft goat cheese or reduced-fat cream cheese
  • (2 Tbsp.) honey
  • (1 tsp.) freshly grated lemon zest
  • (1 1/4 tsp.) vanilla extract, divided
  • (2 cups) white whole-wheat flour
  • (1 1/2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/4 tsp.) salt
  • (2 large) eggs
  • (1 large) egg white
  • (3/4 cup) packed dark or light brown sugar
  • (1 cup) low-fat or nonfat buttermilk
  • (1/3 cup) extra-virgin olive oil
  • (1 1/4 cups) dried figs, chopped
  • (3 Tbsp.) turbinado or granulated sugar

    Instructions

  1. 1Preheat oven to 425°F. Place 12 paper muffin cups into a muffin pan.
  2. 2In a small bowl, mix together goat cheese, honey, lemon zest and 1/4 tsp. vanilla; set aside.
  3. 3In a large bowl, combine baking powder, baking soda and salt, set aside. In a medium bowl, beat together eggs and egg white. Whisk in brown sugar and 1 tsp. vanilla. Whisk in buttermilk and oil.

  4. 4Stir wet ingredients into dry. Add figs, fold to combine. Divide half of batter between the 12 muffin cups. Place 1 tsp. cheese mixture into each muffin cup, top with rest of batter and sprinkle sugar over the top.

  5. 5Bake 13-15 minutes, or until brown and spongey. Cool and serve.
