Ingredients:
  • (1 1/2 cups plus 5 Tbsp.) all-purpose flour, divided
  • (1/2 cup) whole wheat flour
  • (2/3 cup) packed brown sugar
  • (2 Tbsp. plus 2 tsp.) baking powder, divided
  • (1/2 tsp.) ground cinnamon, divided
  • (1/4 tsp.) salt
  • (1 cup) mashed ripe banana
  • (3/4 cup) 1% low-fat milk
  • (3 Tbsp.) canola oil
  • (1/2 tsp.) vanilla extract
  • (1 large) egg
  • (1/4 cup) walnuts, toasted and chopped
  • (6 Tbsp.) regular oats
  • 2 Tbsp.) butter, softened

Banana Nut Streusel Muffins

Spiced banana and walnut muffins with a buttery brown sugar oat streusel topping.

    Instructions

  1. 1Preheat oven to 375°F. Place 12 paper muffin cups into a muffin pan.
  2. 2In a large bowl, combine 1 1/2 cups white flour, wheat flour, brown sugar, 2 tsp. baking powder, 1/4 tsp. cinnamon and salt. Use your hand to make a hole in the center of the mixture.

  3. 3In a separate bowl, stir together banana, milk, oil, vanilla and egg. Pour into the hole you created in the flour mixture and stir until combined. Add walnuts and fold to combine; set aside.

  4. 4In a small bowl, use 2 knives to combine oats, 5 Tbsp. flour, 2 Tbsp. brown sugar, butter and 1/4 tsp. cinnamon.
  5. 5Fill each muffin cup 3/4 full, top with streusel and bake 22 minutes, or until a toothpick comes out clean. Cool and serve.
