SLT Sandwich

  • (2 6-oz. cans) boneless, skinless wild Alaskan salmon, drained
  • (1/4 cup) red onion, minced
  • (2 Tbsp.) lemon juice
  • (1 Tbsp.) extra-virgin olive oil
  • (1/4 tsp.) freshly ground pepper
  • (4 Tbsp.) reduced-fat cream cheese
  • (8 slices) pumpernickel bread, toasted
  • (8 slices) tomato
  • (2 large leaves) romaine lettuce, cut in half

SLT Sandwich

A salmon, lettuce and tomato sandwich on pumpernickel bread with reduced-fat cream cheese instead of mayo!

  1. 1In a medium bowl, mix together salmon, onion, lemon juice, oil and pepper.
  2. 2Top 4 slices of bread with 1 Tbsp. cream cheese each. Top with 1/2 cup salmon salad, 2 slices tomato and a lettuce leaf. Sandwich together and serve.
