Feta Stuffed Chicken Pita

  • (16 oz.) ground chicken
  • (1 Tbsp.) fresh thyme, stalk removed
  • (1 clove) garlic, crushed
  • (3.5 oz.) feta cheese, reduced-fat, crumbled
  • (4) medium pita bread
  • (4) small leaf lettuce, romaine
  • (2/3 cup) roasted red peppers (no oil)
  • (5) black olives, in brine, sliced

Feta Stuffed Chicken Pita

This chicken pita is a healthier option when craving the flavors of Greece.

  1. 1Preheat outdoor grill or indoor grill pan to medium-high heat.
  2. 2In a large bowl, combine the chicken, thyme, garlic and feta cheese.
  3. 3Separate the mix into four equal sections, then form patties.
  4. 4Grill for 5-7 minutes on each side.
  5. 5If serving with pita*, warm the pita on the grill, then stuff each one with lettuce, peppers, olives and a chicken breast. Enjoy!
