Greek Chicken Pitas

Ingredients:
  • (1/4 cup) lemon juice
  • (2 Tbsp.) Crisco┬« Olive Oil
  • (3/4 tsp.) minced garlic, divided
  • (1/2 tsp.) ground mustard
  • (1/2 tsp.) dried oregano
  • (1/2 lb.) boneless skinless chicken breasts, cut into 1/2 in. strips
  • (1/2 cup) cucumber, peeled and chopped
  • (1/3 cup) plain yogurt
  • (1/4 tsp.) dill weed
  • (2) whole pita breads
  • (1/2 small) red onion, thinly sliced

Greek Chicken Pitas

Citrus marinated chicken served on whole pitas with a cool, cucumber yogurt sauce and tangy red onion.

About 20 minutes (plus 1 hour chilling)

About 10 minutes

    Instructions

  1. 1Combine lemon juice, oil, 1/2 tsp. garlic, mustard and oregano in a large ziplock bag. Coat chicken in marinade, seal bag and refrigerate at least 1 hour.

  2. 2Mix together cucumber, yogurt, dill and remaining garlic in a small bowl. Cover and refrigerate.
  3. 3Place a large, nonstick skillet over medium-high heat. Drain chicken, add to skillet. Saute 7-8 minutes, or until cooked through.
  4. 4Top each pita with chicken, yogurt and onion. Fold in half and serve.
