Easy Beef Empanadas

Ingredients:
  • (1 cup) onions, diced
  • (1 tsp.) olive oil
  • (1/2 lb.) ground beef
  • (2 tsp.) cumin
  • (2 tsp.) wine vinegar
  • (1 tsp.) sugar
  • (1/2 tsp.) salt
  • (1/4 tsp.) pepper
  • (11 oz.) thin-crust pizza dough

Easy Beef Empanadas

Thin pizza dough pockets filled with sauteed ground beef and onions, then baked until golden brown.

    Instructions

  1. 1Preheat oven to 400°F. Spray a baking sheet with cooking spray.
  2. 2Place a large skillet over medium-high heat. Add oil. When hot, add onions and saute 3 minutes. Add ground beef and cook another 5 minutes or until browned, breaking it up with a wooden spoon.

  3. 3Meanwhile, form dough into a 16x12 in. rectangle and cut into 8 even squares.
  4. 4Remove pan from heat and add cumin, wine vinegar, sugar, salt and pepper. Divide filling evenly between squares, fold in half diagonally. Use a fork to crimp the edges shut.

  5. 5Place on greased baking sheet, spray with cooking spray and poke each one once with a fork. Bake 10 minutes, or until golden brown and serve.
