Ingredients:
  • (8 oz.) whole-wheat elbow noodles
  • (10 oz. package) frozen chopped broccoli
  • (1 3/4 cups) low-fat milk, divided
  • (3 Tbsp.) flour
  • (1/2 tsp.) garlic powder
  • (1/2 tsp.) salt
  • (1/4 tsp.) ground white pepper
  • (3/4 cup) shredded extra-sharp Cheddar cheese
  • (1/4 cup) shredded Parmesan cheese
  • (1 tsp.) Dijon mustard

Broccoli and Cheese Mac

A whole-wheat macaroni and cheese with a homemade white cheese sauce and chopped broccoli.

    Instructions

  1. 1Fill a large pot with 2 quarts water and place over High heat. When boiling, add pasta. Cook 4 minutes, then add broccoli and cook another 4-5 minutes.

  2. 2Place a large pot over medium-high heat. Add 1 1/2 cups milk and simmer. In a small bowl, whisk together 1/4 cup milk, flour, garlic powder, salt and pepper. Add to pot and whisk for 2-3 minutes.

  3. 3Take off heat and add Cheddar, Parmesan and mustard, stir until melted.
  4. 4Drain pasta and broccoli, toss with cheese sauce and heat another minute on the stove.
