Tex-Mex Chicken Burger

  • (1) lemon
  • (1) lime
  • (1) orange
  • (1/2 tsp.) chili powder
  • (1/2 tsp.) adobo all-purpose seasoning
  • (1 Tbsp.) extra-virgin olive oil
  • (6 six oz.) boneless, skinless chicken breasts
  • (3/4 cup) fresh tomato salsa
  • (6 slices) pepper jack cheese (about 8 oz.)
  • (6) challah rolls or other soft rolls, halved
  • (1) Hass avocado, sliced

Tex-Mex Chicken Burger

A delicious chicken burger with fresh tomato salsa and avocado.

  1. 1To prepare the marinade, combine the zests and juice of each fruit in a ziploc freezer bag. Add the chili powder, adobo seasoning and olive oil.
  2. 2Add the chicken, then seal the bag and flip it around to make sure all the chicken is coated. Let marinade for an hour or overnight.
  3. 3Preheat outdoor grill or indoor grill pan to medium heat.
  4. 4Grill the chicken about 8 minutes each side.
  5. 5Place a slice of cheese on each peice of chicken, top with 1 tbsp. salsa and cook until cheese melts.
  6. 6Place one chicken breast on each roll, top with avocado slices. Serve with remaining salsa on the side.
