Spring Rolls w/Peanut Sauce

  • (1/4 cup) peanut butter
  • (1/4 cup) cilantro leaves
  • (2 Tbsp.) water
  • (4 tsp.) honey
  • (1 Tbsp.) rice vinegar
  • (1 Tbsp.) soy sauce
  • (1 clove) garlic, smashed and peeled
  • (1/8 tsp.) cayenne pepper
  • (2 oz.) thin rice or cellophane noodles, cooked, drained and rinsed
  • (1 small) red bell pepper, slivered
  • (1 medium) carrot, cut into thin matchsticks
  • (1/3 cup) fresh basil leaves, torn into bite-sized pieces
  • (1/4 cup) cilantro leaves
  • (1 Tbsp.) rice vinegar
  • (2 tsp.) dijon mustard
  • (2 tsp.) dark sesame oil
  • (8) round spring roll wrappers

Spring Rolls w/Peanut Sauce

Thin spring roll wrappers filled with tangy, crunchy vegetables and soft noodles served with a sweet peanut sauce.

  1. 1Process peanut butter, cilantro, water, honey, vinegar, soy sauce, garlic and cayenne pepper in a food processor until smooth, set aside.
  2. 2Drain noodles again, place in a large bowl. Toss in bell pepper, carrot, basil, cilantro, vinegar, mustard and sesame oil.
  3. 3Set out a clean kitchen cloth on a flat surface. Fill a large bowl with lukewarm water. Place one wrapper at a time in the water for 30 seconds, place on kitchen towel.

  4. 4Top with noodle filling, fold in sides and roll. Repeat and serve with peanut sauce.
