Pressed Turkey Reubens

  • (2 Tbsp.) Dijon mustard
  • (8 slices) rye bread
  • (4 1-oz. slices) reduced-fat, reduced-sodium Swiss cheese
  • (8 oz.) smoked turkey, thinly sliced
  • (2/3 cup) sauerkraut, drained and rinsed
  • (1/4 cup) fat-free Thousand Island dressing
  • (1 Tbsp.) canola oil, divided

Pressed Turkey Reubens

Smoked turkey and Swiss cheese piled between two slices of rye bread with Dijon mustard, sauerkraut and Thousand Island dressing.

  1. 1Place out bread slices. Spread each one with 3/4 tsp. mustard, then top half with cheese, turkey, 2 1/2 Tbsp. sauerkraut and 1 Tbsp. dressing. Top with remaining dressed bread slices.

  2. 2Place a large nonstick skillet over medium-high heat. Add 1 1/2 tsp. canola oil. When hot, place 2 sandwiches in pan. Top with a heavy skillet and several heavy cans. Cook 6 minutes, turning halfway through.

  3. 3Repeat with rest of oil and other 2 sandwiches, slice in half and serve.
