Garlic Shrimp Subs

  • (3/4 lb.) peeled and deveined medium shrimp
  • (1 Tbsp.) extra-virgin olive oil
  • (1 clove) garlic, minced
  • (1/4 tsp.) salt
  • (1/4 tsp.) ground black pepper
  • (1/4 cup) canola oil mayonnaise
  • (1) celery rib, finely chopped
  • (2 Tbsp.) red onion, finely chopped
  • (4) whole wheat hot dog buns, toasted

Garlic Shrimp Subs

Toasted whole-wheat buns topped with a creamy, crunchy garlic grilled shrimp salad.

  1. 1Preheat grill to medium-high.
  2. 2In a medium bowl, toss together shrimp, oil, garlic, salt and pepper, set aside 10 minutes. Divide evenly between metal skewers.
  3. 3Grill 5-6 minutes, turning once, set aside 10 minutes. Coarsley chop and combine with mayonnaise, celery and onion.
  4. 4Top each bun with shrimp mixture and serve.
