Avocado Mushroom Melt

  • (4 slices) whole-grain bread, lightly toasted
  • (1) avocado, sliced
  • (1 cup) sliced mushrooms
  • (1/3 cup) sliced almonds, toasted
  • (1) tomato, sliced
  • (4 slices) Swiss cheese

Avocado Mushroom Melt

This open faced sandwich starts with toasted whole grain bread and is topped with sliced vegetables, almonds and melted Swiss.

  1. 1Preheat the broiler.
  2. 2Place toast on a baking sheet. Divide avocado, mushrooms, almonds, tomato and Swiss evenly between each slice.
