Tex-Mex Cheese Dip

Ingredients:
  • (2 tsp.) extra-virgin olive oil
  • (1 medium) onion, chopped
  • (2 cloves) garlic, minced
  • (1/2 cup) pale ale, or other light-colored beer
  • (1 1/2 cups) low-fat milk, divided
  • (3 Tbsp.) cornstarch
  • (1 3/4 cups) sharp Cheddar cheese, shredded
  • (10 oz. can) diced tomatoes w/green chiles, drained
  • (2 Tbsp.) lime juice
  • (1 tsp.) salt
  • (1 tsp.) chili powder
  • Cayenne pepper, to taste (optional)
  • (1/4 cup) scallions, chopped
  • (2 Tbsp.) fresh cilantro, chopped

Tex-Mex Cheese Dip

A thick and spicy Cheddar cheese dip with tomatoes, green chiles and some beer.

    Instructions

  1. 1Place a large saucepan over medium heat. Add oil. When hot, add onion and garlic, cook 4-5 minutes or until soft, stirring frequently. Add beer, cook another minute. Add 1 cup milk, bring to simmer.

  2. 2In a small bowl, whisk together remaining milk and cornstarch until combined. Add to pan while stirring, continue to stir for 1-2 minutes or until thickened. Reduce heat to low.

  3. 3Add cheese to pan, stir until melted. Add tomatoes, lime juice, salt, chili powder and cayenne, stir to combine. Top with scallions and cilantro and serve. Enjoy!
