Ham and Cheese Asparagus Bundles

  • (16) fresh asparagus spears, trimmed
  • (1 medium) sweet red pepper, cut into 16 strips
  • (8 oz.) Havarti cheese, cut into 16 strips
  • (8 thin slices) deli ham or prosciutto, cut in half lengthwise
  • (16) whole chives

Ham and Cheese Asparagus Bundles

Blanched asparagus spears and strips of red pepper and cheese wrapped in thin slices of ham and tied with a chive.

  1. 1Fill a large skillet with 1 in. of water and place over High heat. When boiling, add asparagus. Cover and cook 3 minutes, drain and place in an ice water bath. Drain again, pat dry with paper towels.

  2. 2Top each slice of ham with 1 spear asparagus, 1 strip red pepper and 1 strip cheese. Tightly roll and tie up with a chive. Refrigerate and serve.
