Almond Chocolate Biscotti

  • (2 1/2 cups) all-purpose flour
  • (1 1/3 cups) sugar
  • (3/4 cup) unsweetened cocoa
  • (2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) salt
  • (1/2 cup) butter or margarine, melted
  • (3 large) eggs
  • (2 tsp.) vanilla extract
  • (1 cup) almonds, toasted and coarsely chopped
  • (4 oz.) semisweet chocolate, coarsely chopped

Almond Chocolate Biscotti

  1. 1Preheat oven to 325° F.
  2. 2Combine flour, sugar, cocoa, baking powder, baking soda and salt in a medium bowl. In a large bowl, use an electric mixer on medium to beat together butter, eggs and vanilla.

  3. 3Gradually add dry ingredients, beating on low to combine. Add almonds and chocolate, stir by hand to combine.
  4. 4Separate dough in half evenly. Form each half into a 12x3 in. log on an ungreased cookie sheet. Bake 30 minutes. Cool on wire racks 15 minutes.

  5. 5Transfer to a cutting board. Cut each log crosswise into 1/2 in. diagonal slices. Arrange 1/4 in. apart on cookie sheet.
  6. 6Bake another 20 minutes. Cool on wire racks completely and enjoy.
