  • (1/4 cup) reduced-fat sour cream
  • (3 Tbsp.) fruit-flavored vinegar
  • 4 tsp.) sugar
  • (1 1/2 tsp.) poppy seeds
  • (1/4 tsp.) salt
  • Freshly ground pepper, to taste
  • (8 cups) mixed salad greens
  • (2 cups) cooked chicken breast, sliced
  • (2 cups) cantaloupe or honeydew melon, chopped
  • (1/4 cup) walnuts, chopped and toasted
  • (1/4 cup) crumbled feta cheese

Refreshing Chicken and Melon Salad

  1. 1In a large bowl, whisk together sour cream, vinegar, sugar, poppy seeds, salt and pepper. Measure out 1/4 cup and place it in a small bowl, set aside.

  2. 2Toss mixed greens with dressing in large bowl. Top each serving with chicken, melon, walnuts, feta cheese and 1 Tbsp. dressing. Toss and enjoy!
