Lentil and Pepper Salad

  • (16 oz.) dried lentils
  • (3 Tbsp.) sun-dried tomatoes in oil, plus oil from jar
  • (4) finely chopped green onions
  • (1/2 each medium) red, yellow, orange and green peppers, finely diced
  • (1 cup) fresh parsley, finely chopped
  • (1 tsp.) cumin
  • (1/2) lemon, juiced
  • salt and pepper

Lentil and Pepper Salad

An easy to make lentil salad that is healthy and high in protein.

  1. 1Using a strainer, rinse lentils thoroughly under cold running water.
  2. 2Bring 6 cups of water to a boil over high heat. Once it is boiling, add the lentils. When it returns to a boil, lower heat to medium and simmer for about 30 minutes.

  3. 3Drain lentils, then mix all ingredients together in a large bowl and serve.
