  • (1/2 cup) walnuts, coarsely chopped
  • (1 cup) fat-free plain greek yogurt
  • (1 Tbsp.) mild curry powder
  • (1 lb.) precooked boneless, skinless chicken breast, chopped
  • (2 cups) cooked brown rice
  • (2) celery ribs, chopped
  • (1) granny smith apple, chopped
  • (1/4 cup) red onion, chopped
  • (6) dried apricot halves, chopped

Leftovers Salad

Ordinary pantry ingredients come together for anything but an ordinary salad.

  1. 1Place a medium skillet over medium-high heat. Add walnuts, toast 3-5 minutes, shaking the pan frequently. Set aside to cool.
  2. 2In a large bowl, mix together yogurt and curry powder. Toss in walnuts, chicken, rice, celery, apple, onion and apricots. Serve and enjoy.
