Italian Shrimp and Tomato Salad w/Croutons

  • (4 Tbsp.) extra-virgin olive oil, divided
  • (1 clove) garlic, peeled and halved
  • (4 cups) day-old crusty multigrain bread, cut into cubes
  • (1 lb.) cooked shrimp, peeled and coarsely chopped
  • (4 large) ripe but firm tomatoes, coarsely chopped
  • (2 large) green, red and/or yellow bell peppers, diced
  • (3/4 cup) fresh parsley, chopped
  • (1/4 cup) fresh chives, chopped
  • (1/4 cup) Kalamata olives, pitted and sliced (plus 1/4 cup olive brine)
  • (3 Tbsp.) red-wine vinegar
  • (1 1/2 tsp.) fresh thyme, chopped (or 3/4 tsp. dried)
  • Freshly ground pepper, to taste
  • (4 cups) mixed salad greens

Italian Shrimp and Tomato Salad w/Croutons

  1. 1Preheat oven to 350°F. Place 2 Tbsp. oil and garlic onto a baking sheet with a rim, mash with a fork, stir and throw out garlic.
  2. 2Toss bread with oil and bake 12-15 minutes, tossing every 5 minutes. Set aside to cool.
  3. 3Meanwhile, in a large bowl, mix together shrimp, tomatoes, bell peppers, parsley, chives, olives (w/brine), vinegar, thyme, and other 2 Tbsp. oil. Add pepper to taste, set aside 10 minutes.

  4. 4Serve shrimp over mixed greens with croutons.
