Greek Orzo Salad

  • (1/2 cup) orzo or other tiny pasta
  • (1 1/2 tsp.) extra-virgin olive oil
  • (1 clove) garlic, crushed and peeled
  • (1/8 tsp.) salt
  • (1 1/2 Tbsp.) lemon juice
  • (1/8 tsp.) freshly ground pepper
  • (14 oz. can) artichoke hearts, drained and chopped
  • (7 oz. can) chickpeas, rinsed
  • (1/3 cup) crumbled feta cheese
  • (2 Tbsp.) fresh dill, chopped
  • (1 1/2 Tbsp.) fresh mint, chopped
  • (1 large) tomato, chopped
  • (2 cups) baby spinach leaves

Greek Orzo Salad

A mashed garlic dressing finishes this salad with orzo, artichokes chickpeas, and feta cheese.

  1. 1Fill a small saucepan 2/3 full with cold water an place over High heat. When boiling, add orzo and cook 9 minutes, or follow cooking times on package.

  2. 2Drain and place under cold running water to cool. Drain again, toss with oil in a medium bowl.
  3. 3Use the back of a spoon to mash together garlic and salt to form a paste. Place in a bowl, whisk in lemon juice and pepper.
  4. 4Toss with orzo, artichokes, chickpeas, feta cheese, dill, mint and tomatoes. Serve on top of spinach.
