  • (4 large) hard-boiled eggs, shelled and chopped
  • (2 small) stalks celery, finely chopped
  • (3 Tbsp.) red onion, finely chopped
  • (4 oz.) smoked salmon, diced
  • (1/4 cup) light mayonnaise
  • (1/2 tsp.) dried dill weed or (1 Tbsp.) fresh dill, chopped
  • Salt and pepper to taste
  • (8 medium) tomatoes, tops cut off and hollowed out

  1. 1Mix together chopped eggs, celery, onion, salmon, mayonnaise, dill, salt and pepper in a medium bowl. Cover and refrigerate at least 2 hours, up to overnight.

  2. 2Fill each tomato with egg salad. Refrigerate and serve.
