Ingredients:
  • (2 cups) onions, diced
  • (2 Tbsp.) extra-virgin olive oil
  • (2 1/2 lb.) ground lean turkey
  • (2) eggs
  • (3 Tbsp.) cilantro, chopped
  • (1 Tbsp.) minced garlic
  • (2 tsp.) ground cumin
  • (2 cups) diced tomatoes
  • Salt and pepper
  • (1 cup) marinara sauce

Turkey Meatloaf

A lean ground turkey meatloaf with a marinara sauce crust. This low-carb meal is ready in one hour and serves eight.

    Instructions

  1. 1Preheat oven to 350°F. Spray two 9x5 in. loaf pans with cooking spray.
  2. 2Place a large nonstick skillet over medium heat. Add oil. When hot, add onions and cook until lightly browned. Set aside in a bowl to cool.
  3. 3When cool, add turkey, eggs, cilantro, garlic, cumin, tomatoes, salt and pepper, mix to combine.
  4. 4Add equal amounts to each pan, then top each with 1/2 cup marinara sauce. Loosely cover and bake 45 minutes. Slice and enjoy!
