Sweet and Tangy Baked Chicken

  • (3 Tbsp.) Dijon mustard
  • (2 Tbsp.) pure maple syrup
  • (2 Tbsp.) peanut oil, divided
  • (1 Tbsp.) fresh thyme, finely chopped (or 1 tsp. dried)
  • (3/4 tsp.) freshly ground pepper
  • (1/2 tsp.) salt
  • (4- 4 1/2 lb.) bone-in chicken pieces (thighs, drumsticks, and/or breasts), skin removed, trimmed
  • (1 1/2 cups) fresh whole-wheat breadcrumbs

Sweet and Tangy Baked Chicken

Bone-in chicken pieces marinated in a maple mustard sauce then baked with a crispy breadcrumb crust.

  1. 1In a large bowl, whisk together mustard, maple syrup, 1 Tbsp. oil, thyme, pepper, and salt. Place chicken into marinade, turning to coat. Cover and refrigerate 30 min-6 hours.

  2. 2Preheat oven to 400°F. Set out a large baking sheet with a wire rack on top.
  3. 3On a plate, mix together breadcrumbs and 1 Tbsp. oil. Place chicken skin side down into breadcrumbs, then onto wire rack, skin side up. Bake 35-40 minutes, or until 165°F. Enjoy hot or cold.
