Sweet and Spicy Shrimp and Broccoli

Ingredients:
  • (1 lb.) large shrimp, peeled and deveined
  • (1 clove) garlic, minced
  • (1 Tbsp.) fresh lime juice
  • (1 tsp.) ground cumin
  • (1 tsp.) paprika
  • (1/2 cup) natural unsalted creamy peanut butter
  • (1/3 cup) barbecue sauce
  • (4 Tbsp.) water
  • (1/2 small) chipotle pepper in adobo sauce, minced
  • (1 Tbsp.) canola oil
  • (1/8 tsp.) salt
  • (4 cups) broccoli florets
  • (1 Tbsp.) fresh lemon juice

Sweet and Spicy Shrimp and Broccoli

Shrimp tossed with garlic, lime and warm spices served with steamed lemon broccoli and a peanut barbecue sauce.

    Instructions

  1. 1In a large bowl, toss shrimp with garlic, lime juice, cumin and paprika, set aside 10 minutes.
  2. 2In a small bowl, whisk together peanut butter, barbecue sauce, 3 Tbsp. water and chipotle pepper until smooth, set aside.
  3. 3Place a large, nonstick skillet over medium-high heat. Add oil. When hot, add shrimp and salt. Cook 5-6 minutes, flipping halfway through, set aside on a plate.

  4. 4Place skillet back over medium-high heat, add broccoli and 1 Tbsp. water. Cover, steam 2-3 minutes. Toss with lemon juice, serve with shrimp and barbeque sauce.
