Spicy Two Bean and Cheese Burritos

Ingredients:
  • (1 Tbsp.) canola oil
  • (1 clove) garlic, minced
  • (1/2 tsp.) chipotle chile powder
  • (1/4 tsp.) salt
  • (1/3 cup) water
  • (15 oz. can) organic black beans, drained
  • (15 oz. can) organic kidney beans, drained
  • (3 Tbsp.) refrigerated fresh salsa
  • (6 10-in.) reduced-fat flour tortillas
  • (1 cup) reduced-fat 4-cheese Mexican blend, shredded
  • (1 1/2 cups) chopped plum tomato
  • (1 1/2 cups) shredded romaine lettuce
  • (6 Tbsp.) green onions, thinly sliced
  • (6 Tbsp.) light sour cream

Spicy Two Bean and Cheese Burritos

Mashed black and kidney beans, cheese, tomatoes, lettuce and sour cream rolled up in flour tortillas.

    Instructions

  1. 1Place a large nonstick skillet over medium heat. Add oil.
  2. 2Add garlic, cook 1 minute, stirring. Add chile powder and salt, stir for 30 seconds. Add 1/2 cup water and beans, stir and bring to a boil. Reduce heat, simmer 10 minutes.

  3. 3Meanwhile, heat tortillas in microwave according to package. Remove bean mixture from heat, add salsa. Use a fork to mash together.
  4. 4To assemble burritos, layer 1/2 cup beans, 2 1/2 Tbsp. cheese, 1/4 cup tomatoes, 1/2 cup lettuce, 1 Tbsp. onion and 1 Tbsp. sour cream in the center of each tortilla. Loosely roll, cut in half and enjoy!
