Flaky Tomato Basil Salmon
A whole salmon fillet topped with garlic paste, fresh basil and thin tomato slices and grilled until flaky.

Instructions
1Preheat outdoor grill or indoor grill pan to medium heat.
2Using a chefs knife, mash garlic together with 3/4 tsp. salt until it forms a paste. Set aside in a small bowl, add oil and
stir.
3Place salmon fillet skin side down on a piece of heavy duty foil that has been sprayed with cooking spray. Spread with garlic paste, top with 1/3 cup basil tomato slices and 1/4 tsp. salt and pepper.
4Grill salmon on foil for 10-12 minutes, or until flaky. Serve with rest of basil.
