Cheesy Mostaccioli

  • (8 oz.) uncooked mostaccioli
  • (1/2 lb.) lean ground turkey
  • (1 small) onion, chopped
  • (14 1/2 oz. can) diced tomatoes, undrained
  • (6 oz. can) tomato paste
  • (1/3 cup) water
  • (1 tsp.) dried oregano
  • (1/2 tsp.) salt
  • (1/8 tsp.) pepper
  • (2 cups) fat-free cottage cheese
  • (1 tsp.) dried marjoram
  • (1 1/2 cups) shredded part-skim mozzarella cheese
  • (1/4 cup) grated Parmesan cheese

Cheesy Mostaccioli

Mostaccioli noodles layered with a turkey meat sauce, mozzarella and cottage cheeses and baked until melted and bubbly.

  1. 1Preheat oven to 350°F. Spray an 11x7 in. baking dish with cooking spray. Fill a large pot with 2 quarts cold water and place over High heat.
  2. 2When boiling, add mostaccioli and cook according to package. Drain.
  3. 3Meanwhile, place a large saucepan over medium heat. Add turkey and onion, cook until turkey is browned, stirring often. Drain.
  4. 4Add tomatoes, paste, water, oregano, salt and pepper. Bring to a boil, cover and simmer 15 minutes over medium-low heat. Mix together cottage cheese and marjoram in a small bowl.

  5. 5In greased baking dish, layer 1/2 cup meat sauce, half of mostaccioli, meat sauce and mozzarella. Top with cottage cheese, and remaining mostaccioli, meat sauce and mozzarella. Top with Parmesan.

  6. 6Bake 30-40 minutes, or until bubbly. Serve and enjoy.
