Caribbean Rum Chicken

  • (4) bone-in chicken breast halves, with skin
  • Salt and pepper to taste
  • (20 oz. can) pineapple chunks, drained
  • (1 cup) rum
  • (10 oz. jar) sweet and sour sauce

Caribbean Rum Chicken

Juicy chicken breasts twice-baked with pineapple and rum until the skin is nice and crispy!

  1. 1Preheat oven to 375°F. Spray a 9x13 in. baking dish with cooking spray. Place chicken in baking dish with ribs facing up.
  2. 2Cover and bake 15-20 minutes, uncover and flip. Arrange 3/4 of pineapple around chicken, cover with rum, cover and bake another 15 minutes. Serve with leftover pineapple.
