White Chocolate Cranberry Oatmeal Cookies

  • (1 cup) all-purpose flour
  • (1/4 cup) wheat germ
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) salt
  • (1/4 tsp.) ground ginger
  • (1 large) egg
  • (3/4 cup) packed dark brown sugar
  • (1/3 cup) canola oil
  • (1 tsp.) vanilla extract
  • (1/2 cup) quick-cooking or old-fashioned oats (not instant)
  • (2 oz.) white chocolate, chopped
  • (1/3 cup) dried cranberries
  • (1/4 cup) crystallized ginger, chopped

White Chocolate Cranberry Oatmeal Cookies

  1. 1Preheat oven to 375°F.
  2. 2In a small bowl, combine flour, wheat germ, baking soda, salt and ground ginger, set aside.
  3. 3In a large bowl, whisk together egg, brown sugar, oil and vanilla. Add dry ingredients to wet in several batches, stirring in-between. Stir in oats, chocolate, cranberries and crystallized ginger.

  4. 4Use a tablespoon to drop dough onto 2 ungreased cookie sheets, leaving 1 1/2 in. between each cookie.
  5. 5Bake 8-10 minutes or until lightly golden on the edges, cool on wire rack.
