Minty Chocolate Pudding

  • (3 cups) fat-free milk
  • (1/2 cup) packed fresh mint leaves
  • (2/3 cup) sugar
  • (1/4 cup) cornstarch
  • (3 Tbsp.) unsweetened cocoa
  • (1/8 tsp.) salt
  • (3 large) egg yolks, lightly beaten
  • (1/2 tsp.) vanilla extract
  • (2 oz.) semisweet chocolate, chopped
  • Mint sprigs, optional

Minty Chocolate Pudding

A thick and creamy chocolate pudding made with steeped mint leaves.

  1. 1Place a small saucepan over medium-high heat. Add milk and heat until small bubbles form the edges. Take off the heat, add mint and set aside 15 minutes.

  2. 2Strain, transfer liquid back to pan. Add sugar, cornstarch, cocoa and salt. Place pan back over medium heat and whisk until boiling and thick.
  3. 3In a medium bowl, whisk together egg yolks and half of hot milk. Add to pan with other half of milk and stir until boiling. Cook 1 minute, take off heat and stir in vanilla and chocolate until melted.

  4. 4Transfer to a large bowl, cover with plastic wrap (touching pudding) and refrigerate until chilled. Serve with mint sprigs.
