Gingerbread Apple Cobbler

Ingredients:
  • (4 medium) tart apples, peeled and sliced
  • (1 cup) water
  • (1/2 cup) packed brown sugar
  • (1 Tbsp.) lemon juice
  • (1/4 tsp.) ground cinnamon
  • (1) egg
  • (1/4 cup) sugar
  • (1/2 cup) buttermilk
  • (1/4 cup) molasses
  • (2 Tbsp.) canola oil
  • (1 cup) all-purpose flour
  • (1/2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) ground ginger
  • (1/4 tsp.) salt
  • (1/4 tsp.) ground nutmeg
  • (2 tsp.) cornstarch
  • (1 Tbsp.) cold water

Gingerbread Apple Cobbler

Sweet apple cobbler baked with a spiced gingerbread topping.

    Instructions

  1. 1Preheat oven to 350°F. Spray an 8x8 in. baking dish with cooking spray.
  2. 2Place a large saucepan over High heat. Add apples, water, brown sugar, lemon juice and cinnamon. Bring to a boil, then cover and simmer on medium-high 8-10 minutes. Set aside off heat.

  3. 3In a medium bowl, whisk together egg, sugar, buttermilk, molasses and oil. In a separate bowl, combine flour, baking powder, baking soda, ginger, salt and nutmeg. Add to egg mixture, stir to combine.

  4. 4In a small bowl, whisk together cornstarch and cold water, add to apples. Pour into prepared baking dish, top with gingerbread mixture.
  5. 5Bake 25-30 minutes, or until a toothpick comes out clean. Enjoy!
