  • (1 cup) all-purpose flour
  • (1/3 cup) sugar
  • (1/4 cup) unsweetened cocoa powder
  • (2 tsp.) baking powder
  • (1/2 tsp.) salt
  • (1/2 cup) nonfat milk
  • (1 large) egg, lightly beaten
  • (2 Tbsp.) canola oil
  • (1 tsp.) vanilla extract
  • (1/4 cup) pecan halves, toasted
  • (3/4 cup) brown sugar
  • (1 1/3 cups) hot strong coffee

Fudgey Chocolate Cake

  1. 1Preheat oven to 375°F. Spray an 8x8 in. baking dish with cooking spray.
  2. 2In a small bowl, combine milk, egg, oil and vanilla. In a large bowl, combine flour, sugar, cocoa, baking powder and salt. Use your hand to make a hole in the center and add the wet ingredients. Stir to combine.

  3. 3Add pecans, stir and pour into greased pan. Place brown sugar into coffee, stir to dissolve. Pour over batter and bake 25 minutes, or until a toothpick comes out clean. Cool 10 minutes and serve.
