Chofee Brownies

  • (2 Tbsp.) instant coffee granules
  • (1/4 cup) hot water
  • (1/4 cup) butter
  • (1/4 cup) semisweet chocolate chips
  • (1 1/2 cups) all-purpose flour
  • (1 1/3 cups) sugar
  • (1/2 cup) unsweetened cocoa
  • (1 tsp.) baking powder
  • (1/2 tsp.) salt
  • (1 tsp.) vanilla extract
  • (2 large) eggs
  • (1/4 cup) toffee chips

Chofee Brownies

Flavors of chocolate, coffee and toffee come together to form these "chofee" brownies.

  1. 1Preheat oven to 350ºF. Spray a 9 x 9 in. baking pan with cooking spray.
  2. 2Dissolve coffee in hot water, set aside. In a microwave-safe bowl, combine butter and chocolate chips, microwave on High 30 seconds at a time, until butter melts, stir.

  3. 3In a medium bowl, whisk together coffee mixture, butter mixture, vanilla and eggs. In a separate large bowl, stir together flour, sugar, cocoa, baking power and salt.

  4. 4Combine coffee mixture and flour mixture, spread into an even layer in pan. Top with toffee chips. Bake 22 minutes, cool in pan on a wire rack. Serve warm or cool. Enjoy!
